Mr. Asimov has been writing about wine since 1999 and is known for popular columns like $25 and Under, The Pour, and Wines of the Times. He has collaborated with Fearrington Wine Director Troy Revell on curating a wine lineup for you, focusing on natural processes, organic wines that undergo minimal intervention, and low sulfur levels in their production. Chef Paul Gagne’s 5-course dinner menu will be paired with these six memorable wines:

• Envinate ‘Palo Blanco’ Listan Bianco, Canary Islands, Spain 2022.

• Domaine de Galouchey ‘Vin de Jardin’ Bordeaux, France 2020.
