  • Shrimp and scallop ceviche with winter lettuces and caviar.
  • Truffled lobster mac and cheese with triple cream brie, fontina, and parmesan regiano.
  • Lemon sorbet.
• Choice of Entree:
  • Saffron seafood risotto with shrimps, scallops, and crawfish in a Saffron broth.
  • Coriander and espresso-roasted tenderloin with a butternut squash puree and red wine demi.
  • Pan-seared duck breast with truffled mash and mango demi.
  •  Roasted Poblano pepper stuffed with mixed nuts and vegetables on a parsnip puree with a blackberry-tangerine glaze.
• Choice of Dessert: 
  • Caramel panna cotta with a berry compote and chantilly cream.
  • Chocolate strawberry shortcake with a Mascarpone whip.
